Chicken Noodle Soup Recipe Ingredients
- Rice noodles – 300gms
- Soy sauce – 2tbsp
- Sliced red chillies with seeds – 2
- Sliced onion – 1
- Bean sprouts blanched – 1 ½ cup
- Chopped coriander – 2 tbsp
- Basil leaves – 8-10
- Lemon – 1
For preparation of Broth:
- Boneless chicken cubes – 500gms
- Chicken stock – 10 cups
- Sliced spring onions – 4
- Ginger crushed – 1 inch piece
- Cinnamon – 1 inch stick
- Sugar – 2tbsp
- Fish sauce – 2tbsp
- Salt to taste
Preparation
Step 1
Take the chicken stock into a deep non-stick pan and boil it add the chicken cubes, spring onions, cinnamon, ginger, sugar and salt. Boil gently for 40-50 minutes. After boiling the content drain the stock and cut the chicken cubes into small pieces.
Step 2
Take deep non-stick pan and put four cups of water on it. Now add the rice noodles and boil it. After boiling drain the noodles into a bowl add little cold water to it.
Step 3
To the drained stock add the fish sauce and mix the content well. In a bowl mix the soy sauce and chilli slices keep it aside.
Step 4
Take a serving bowl and place the noodle on it. Over noodles place the chicken pieces alone with sprouts, coriander leaves, beans, onions, basil leaves and pepper powder. Take the chillies and soy sauce bowl aside and garnish with lemon wedges. Hot and tasty chicken noodle soup is ready to taste.
