  1. Chicken – 500 grams
  2. Chopped onions – 2 medium
  3. Chopped tomatoes – 2 medium
  4. Turmeric powder – 1 tbsp
  5. Curry leaves – few
  6. Lemon juice – 2 tbsp
  7. Salt to taste
  8. Oil – 4 tbsp
  9. Ginger garlic paste – 2 tbsp
  10. Chopped coriander
  11. Ingredients for masala paste
  12. Fennel seeds or sombu – 2 tbsp
  13. Dry red chillies – 4
  14. Coriander seeds – 3 tbsp
  15. Cumin seeds – 1 tbsp
  16. Cinnamon stick - 1 inch
  17. Pepper corns – 2 tbsp
  18. Cloves – 4
  19. Grated coconut -1/4 cup
  20. Black stone flower – 2

Chicken Chettinad recipe Preparation 

Step 1

First wash the chicken pieces add turmeric powder, lemon juice and a little bit of salt. And mix the content well. Keep it aside for few minutes.

Step 2

For the preparation of masala gently dry roast the red chillies, coriander seeds, cumin seeds and grated coconut separately till light golden color. Put the whole spices in a mixture and grind the content till fine and smooth paste.

Step 3

Take a pressure cooker and put oil and heat it. Now add chopped onions and fry them till soft. Add the ginger and garlic paste and some curry leaves saute it for few minutes. Add the chicken content mix the well. Now put the chopped tomatoes to the content and mix it well. Put the lid to the cooker and cook it for minimum 2 whistles. After 2 whistles remove the cooker from flame and keep it aside for 5 minutes. Remove the lid and put the cooked chicken in a deep frying pan and add the prepared smoothed masala paste and cook for 10 minutes. Finally add chopped coriander leaves and serve it hot with plane rice or roti or paratha or naan.
