Haleem recipe hyderabadi style step by step at home

Hyderabad haleem is one of the famous and traditional recipes. Haleem is an Arabic dish. When the Nizams rule the Hyderabad Arab Diaspora introduce this recipe to the Hyderabad peoples. Ramadan is the Islamic month. During Iftar everyone can do day long past and to take the evening meal. This dish is traditionally served on Iftar, weddings and other occasions. The traditional haleem is prepared on very low flame for minimum 7 to 8 hours. In the preparation of haleem we can use the main ingredients are meat, wheat, lentils, ghee, ginger garlic paste and some spices like cinnamon, cardamom, cloves and black pepper. This recipe is prepared like a gravy or stew. Only in the month of Ramdan this dish will be sold by the people in the whole Hyderabad city. Haleem must be served with chopped coriander, sliced boiled eggs and some fried onions.

Haleem recipe Ingredients

  1. Mutton – 1 kg
  2. Yogurt – ½ kg
  3. Ginger garlic paste – 2 tbsp
  4. Gram lentils – ½ cup
  5. Urad dal – ½ cup
  6. Moong dal - /2 cup
  7. Butter – 2 tbsp
  8. Wheat grain – ½ cup
  9. Sliced onions – 2 medium
  10. Chopped green chillies – 5
  11. Cinnamon stick – 1 inch
  12. Black pepper corn – 1tbsp
  13. Cardamom – 3
  14. Cloves – 3
  15. Garam masala – 2 tbsp
  16. Turmeric powder – 1 tbsp
  17. Red chilli powder – 2 tbsp
  18. Oil – 1 cup
  19. Mint leaves – ½ bunches
  20. Coriander leaves – ½ bunches
  21. Roasted cashews – 1 tbsp
  22. Roasted almonds – 1 tbsp
  23. Lemon juice – 2 tbsp

Haleem recipe Preparation 

Step 1

Soak the wheat in water for minimum two hours and boil them with water till tender and softy. Take the lentils in a bowl and wash them and soak in water for one hour. And keep the lentils in pressure cooker make a fine paste with grinder.

Step 2

Take a pan and heat oil on it. Now add cinnamon stick, cloves and cardamom fries them for one minute. Add meat, sliced green chillies and ginger garlic paste cook the content for 2 minutes. Now add red chilli powder, turmeric powder and some salt to taste. Keep the lid on the pan and cook the content on low flame till the meat will be tender and smooth. Now grind the meat content with the help of food processor. Now add the wheat grains in the grounded meat and mix the content well.

Step 3

Take the pressure cooker and heat oil add the mixture of grounded meat and wheat paste, chilli powder , mint leaves, some coriander leaves, salt to taste, lentil paste, some water and yogurt. Now put the lid to the pressure cooker and cook it for 2 whistles. Now remove the pressure cooker from the flame and keep it aside till the pressure will be gone. After that keep the cooker o low flame and add 2 tbsp of butter and mix the content continuously for 10 minutes. 

Step 4 

Now it’s time to garnishing. Take the Haleem in a serving bowl and garnish it with roasted almonds, roasted cashews, fried onions, coriander leaves, some mint leaves and a little bit of lemon juice. Serve the Haleem in hot.
