- Maida – 1 cup
- Salt to taste
- Oil – 1tbsp
- Warm water – ½ cup
- Ingredients for stuffing
- Boiled potatoes – 2 smashed
- Cumin seeds - 1 tbsp
- Coriander powder – 1 tbsp
- Turmeric powder – ½ tbsp
- Red chilli powder – 1 tbsp
- Green chilli paste – 2 tbsp
- Ginger paste – 1 tbsp
- Dry mango powder – ½ tbsp
- Garam masala – ½ tbsp
- Salt to taste
- Oil – for deep frying
Kachori recipe Preparation
Step 1
For the preparation of outer layer take a bowl and put the Maida add oil, salt to taste and some warm water. Mix the content well and prepare a fine and smooth dough. Keep aside for 10 minutes.
Step 2
For the preparation of stuffing take non stick pan heat oil add cumin seeds, green chilli paste, ginger paste, and smashed and boiled potatoes. Fry the content for 2 minutes add salt to taste, turmeric powder, red chilli powder and coriander powder. Cook the content for 2 minutes. Finally add a little bit of dry mango powder and ½ tbsp of garam masala to the content keep it aside.
Step 3
Now make the perfect outer layer first break the smooth dough into small bolls and dust with some flour to make a fine circle. Now put the stuffing content in the circle and close the edges and make the kachori. Put the deep fryer pan in the flame add oil for deep frying. Heat the oil and put the prepared kachori’s in the oil gently fry the kachori on both sides till golden color. Serve the kachorie’s with green chutney or tamarind chutney.
