Salad:- Beets: 2 cups (Steamed until just soft,

- Fennel bulbs: 2 cups thinly sliced
- Walnuts: 1/3 cup halved
- Goat’s cheese: 1/2 cup softened
- Dressing:
- Virgin olive oil: 2 tbsp
- Rice vinegar: 1⁄4 cup
- Honey: 1tbsp
- Salt: To taste
